ICR is your radio station. We don’t just play music. We’re here to entertain, inform and connect the Ipswich community. We also give a voice to those who have important things to say, but don’t get a chance to say them on mainstream radio.

Jerk Wings with Cucumber and Avocado Salad

12 Chicken Wings
2 Lemon
Salt and pepper
1 jar Jerk seasoning, tropical sun paste or dried
1 ripe avocado
1 med cucumber
1/2 med red onion
1/2 lemon juice
Pinch of salt
Salad: thinly slice the cucumber and red onion 
into a bowl add diced avocado, squeeze of lemon 
and a pinch of salt. Mix together taking care not to 
break the avocado to much. Chill and serve with the 
Clean and remove any feathers from the chicken 
wings. Squeeze the juice of one of the lemons over 
the wings. In a large bowl season the wings with 
the salt and pepper(you will only need a little as the 
jerk seasoning also contains salt and pepper). Cover 
with cling film and set aside for 1 hour, then drain off 
any juices that have appeared in the bowl, then 
take 2tbsp of the Jerk seasoning and spoon over 
the wings using your hands rub the seasoning into 
the chicken and marinade for a further 30 mins. Preheat 
the oven or grill, remove the chicken wings from 
the bowl fold into elbows and place onto a lightly 
greased baking tray then place in to the oven gas 2-
3. After 15mins check the wings turning them over 
and brush with a little jerk paste if you wish. Serve with the 
cucumber and avocado salad.

Beef ,Yam and Pea Soup

1lb diced beef
3 tbsp vegetable oil 
2 medium Yams
2-3 pints water
 4 fresh thyme sprigs
2 cloves garlic (minced)
2 stocks spring onions,1 green pepper, chopped
1 small Scotch Bonnet pepper whole
1-2 beef stock cube
1 can Black Eye Peas
Season the beef with salt and pepper and gently 
fry In a large sauce pan until all sides of the beef 
are sealed, then peel and chop the yam into chunks and add 
to the pot. Mix with the beef, then add the 
thyme, spring onions,  green bell pepper and the 
garlic, then stir and then add the water and the beef 
stock cube. Cover with a lid and bring to the boil for 
about 20 mins then reduce the heat and check the beef 
and yams for tenderness. Add the canned peas 
and the whole Scotch Bonnet, taking care to not break the 
pepper as it is extremely hot!!!!!! Allow to simmer 
for a further 20-30 mins on a low heat. The soup 
will thicken because of the starch contain of the 
yams. Remove the Scotch Bonnet before serving.

It's with great sadness that I have to report that the ICR family has lost one of it's members as Owen Williams, better known to listeners as DJ Swill, presenter of The Widgey Widgey Show, passed away peacefully a couple of days ago. We are in a state of shock here at ICR HQ, and by way of a tribute we will be running Widgey Widgey Shows back-to-back tonight(Tuesday) from midnight-6AM. These will be made available to download/stream later this week and will be posted on our official Facebook page.
